Just wondering if the power supply I have would be good enough to run a GTX 1060 SSC or should I buy another psu?

I would get a better power supply , to run the 1060.

No that is a low quality PSU on the line with the old Corsair CXM units.

Go for at least a tier 2 but preferreble a tier 1.
