For strictly gaming, the i7 is going to give you a decent boost.... but the Ryzen offerings come at a much more attractive pricepoint. Are you looking to stream etc too? Or strictly 100% gaming? If streaming, the Ryzen5 1600 is a pretty appealing option..... the added cores/threads of the R7's don't make too much sense for gaming.
You're building around SLI 1080's? Why not 1080TI's? If you're going the SLI route from the outset, it only really makes sense with the "top of the line" card, otherwise a single 1080TI would likely be a smarter route, due to games not scaling overly well with SLI (if at all).
What's your budget and location? What resolution? And when are you looking to buy?

If you already have all the options in hand, I'd suggest trying them out.
I'd expect, as above - the Ryzen to be more beneficial if you want to stream etc, in addition to gaming. Strictly gaming though, the i7 is going to win out.
