So should I wait for coffee lake, buy the i7 7800x, buy an i7 7700k, buy the i7 7740x, or should I buy the ryzen 7 1800x? I am going to be doing gaming mostly (90% gaming 10% productivity), so... what do you people suggest?
I recommend the i7 7700K for gaming.
For gaming other i7 options won't give you much more than the 7700K can offer but the 7700K is cheaper because it's not an "Extreme" CPU.
The AMD choice isn't bad be once again overprice when you compare the 7700K for mostly gaming.
IF you did a lot of other stuff as well then I'd suggest one of the others.
(FYI, the 7740x is almost the same as a 7700K but it runs on a different platform.)
The R7 1800x is a good all around CPU but once again looses (slightly) to the cheaper 7700K in gaming.
Having said all that...
I actually agree with captainsharisma, I'd wait to get the i7 8700K.
for gaming, if you can't wait then go for the 7700K, if you can and it looks like it won't be long till coffeelake is released then do that because the I7 8700K will come with 6 cores/12 threads

Definitely go with the 7700k, as you dont want to wait too long and get one of the first batch of processors, (I call these the Beta Testing Processors.)
