Which GTX 1060 model should pick?

Hard pick then. Might just go with the Zotac because it is cheapest at the moment.

For cooling performance, the Zotac is probably in the lead, it uses more copper heatpipes, but it lacks a backplate. The Windforce card should cool better than the Gigabyte G1 Gaming card, because it has larger fans. The G1 Gaming card comes clocked the highest, but the Zotac is just a few MHz behind. Not a big difference there.
They should all overclock to about the same amount, and even if the frequency is slightly different WITHOUT OVERCLOCKING the dynamic nature of GPU frequency could produce similar results.

I suggest you simply use NEWEGG (not Amazon as it mixes reviews for similar products) to use customer feedback to help judge product quality.

Look at both the AVERAGE egg score, and the 1/5 and 2/5 scores to look for common issues (like failures, or coil whine etc).
 
Double check the clock speeds on all of them. Not a huge deal, but the factory overclock sometimes provides a decent little bump, and if you don't want to overclock that becomes more important. You also want to double-check the memory clock speeds, as some GTX 1060s have 9Gbps GDDR5. That also can provide a decent little boost in performance.

I searched the cards you listed, but unfortunately I can't give you a sure answer. There are a few cards that have almost identical names, so I can't be sure which you are looking at. From what I did find, however, the Gigabyte Windforce card looks to be the better option of the two Gigabyte options. It is higher clocked, has a better cooler, and looks to have an improved power design.
