New System Build Options

I am going to build a new PC this winter for my next semester classes for Auto cad and Solid works, but would like to be able to game on with a few high end graphical games. I have only come up with 3 different types of builds. I have a 500gb and 4tb hard drive I will be taking from my old system.

1st Build Option
Cpu: Ryzen 1800x
Motherboard: ASRock X370 Taichi
Ram: Trident Z RGB 32 Gb
Power Supply: Seasonic 750 or 850 watt
Storage: 2 10 Tb Hard drives

2 Build Option
Cpu: Threadripper any verison
Motherboard: ASRock X399 Taichi or ASUS ROG ZENITH EXTREME
Ram: Trident Z RGB 32 Gb
Power Supply: Seasonic 1200 watt
Storage: 2 10 Tb Hard drives

3 Build Option for 2 pcs
Cpu: Intel i7 or i5 and Ryzen 1600x or 1700
Motherboard: Intel MSI Z270 GAMING PRO CARBON / Ryzen ASRock X370 Taichi
Ram: 16 to 32 gb ram for Intel / Ryzen 32gb Trident Z
Power Supply: Seasonic 650 to 750 on both
Stroage: 500 gb m.2 and 5 4tb hard drives

The case I would say is dependent with the which option is better and cooling would be looking at custom loop with the top 2 less on the bottom option. The other major thing is graphics card I was thinking between a 1070, 1070 Ti(if it comes out soon), 1080, 1080 Ti, or Titian Xp.

What is the best option along with any better hardware that would be better for the computer too?
Also what would be 3 of the same good monitors either 24 inch or 27 inch?

I think there is no need to use 2 separate PCs for gaming and content creation .Get the rysen 1800x (it's a balanced for both gaming and productivity)and the gtx 1080ti (for 4k monitor) or a gtx 1080(for 1440p monitor) .
Incase of monitor , minimum 28inch and above recommend for 4k and 24inch for 1440p .
Psu 750w 80+ bronze is good or gold and platinum for high efficiency
32gb Ram as u do productivity
