The GTX 1060-6GB will give you more graphics performance (higher FPS) due to the higher number of CUDA cores (and VRAM) compared to the 3GB version. The 6GB version is considered top-of-the-line GPU for 1080p-resolution/60Hz-refresh rate monitor gaming.

Best price/performance (as of today's current price listing) would be the Asus GTX 1060 Dual OC, recommended for ATX/mATX-sized rigs:

If you have a mini-ITX rig (small form factor), where size of the GPU is limited due to spatial clearance in your case, you can opt for the single-fan model such as the EVGA GTX 1060 SC Gaming:

Video Card: EVGA - GeForce GTX 1060 6GB 6GB SC GAMING Video Card ($269.99 @ Newegg)

I would say yes, it's worth it. Games are always using more and more VRAM and 3GB is definitely on the low side for current games. Also from what I know about GTA 5 it could probably use the extra processing resources

Question from Kasures : "Gpu ram 3gb or 6gb?"

The difference between the GTX 1060 3gb and 6gb is more than just VRAM (and this is unique to this card) the chip on the 3Gb card is actually cut down and it affects performance. In fact in some games the GTX 1050ti 4gb outperforms it. The GTX 1060 6gb card is by far worth the extra money.
