Will a 2 GTX 1080 Ti + Quadro P2000 work? Will it work as x16/x8/x8? I dont need SLI since It'll be for GPU rendering.

It will operate in PCIe 3.0 x8/x8 + PCIe 2.0 x4. That chipset is not optimal for all those GPU.

If GPU Rendering is your goal. consider x99 motherboards with a cheap Xeon. This supports x8/x16/x8 Mode.
