The title is pretty self explanatory, it's kind of a weird, perhaps dumb question. So basically, I have a GTX 1050ti and I currently have a 1280x1024 monitor. I want to check how my GPU would work on Full HD resolution, so, if I set the resolution to 1920x1080, even though it doesn't show up properly on my 1280x1024 monitor, is my graphics card working as if it would work on a Full HD monitor? Am I getting the FPS I'd get on a Full HD monitor with Full HD resolution, even though it's a 1280x1024 monitor?
Does my GPU work on a 1280x1024 as it would on a 1920x1080 monitor when I set the resolution to Full HD?

Thats not correct. The only relevant part is what resolution the graphics card is outputting to.
Many monitors will accept a different resolution even if it cannot display it natively, it will scale it to still display (but wont nessecarily look very good). Lookup upscaling and downscaling, many monitors can do this (in fact I have a HP monitor here, native resolution is 1650x1050, but will accept an output of 1920x1080 and scale it accordingly).
