Will an 8700K bottleneck two-way SLI GTX 1080's?

7700K/2 way 1080s?? If playing at 1440P or above, I'm going on record for predicting a 'massive' (i.e., measly!) 1-2 fps increase with an 8700K....

I'd sure want to wait and see how much /if any of a boost is seen in assorted resolution/refresh rate scenarios with your favorite games before making such a purchase. (At least a few folks 'upgraded' to R7-1700 from a 4790K only to be met with frame rate decreases, somewhat disheartening, of course....)

The CPU will easily support 60hz in most games. The gpus will easily support max settings in most games.

I don't see why you're upgrading from your 7700k though? It should be performing perfectly fine and not limiting you anyway near noticeable.

My computer isn't finished yet, I have everything listed but the CPU and motherboard, I filled out my specs before I decided to go with coffee lake instead of kaby lake.

I'm strapped for cash right now and can only buy the CPU/motherboard when it becomes financially possible fro me.

Well I'd send back one gtx 1080 if you can because a single GTX 1080 is already overkill for most 1080p games. That is, if you aren't going to upgrade monitor. No need for i7 processor too, for 60hz gaming. A coffee lake i5 / Ryzen 5 can get the same job done, a lot cheaper.
