Everything looks great, the only thing I might change, is maybe look for some more affordable Ram sticks. Those Corsair ones seem a bit expensive.
I would go for the Crucial - Ballistix Sport LT 16GB (2 x 8GB) DDR4-2666
Its not like there's any real difference between them (Crucial vs your Corsair) in gaming anyways.

As for the CPU Cooler, even if you dont overclock, of course the aftermarket cooler is better. I dont see why there's a discussion about this even.

Yes, it looks very good, there are only two things i would change

get a R5 1600, there is no difference if overclocking

I would get the western digital 1tb 7200rpm HDD. much more reliable and cheaper

other than that it looks good!

I really intend to use 3rd party cooler,
should i throw the 1600's stock cooler ? or better keep with stock?

I would go with the after market cooler, since im amusing you will overclock

Sorry to say but for ryzen it does matter, only for intel it doesnt. It can give a performance boost of 15-20% the high frequency ram compared with low frequency on ryzen.

Fair enough, then his choice of Ram sticks is excellent in that case. Better timings as well (not that this makes a real difference).
