Here are the stock results, however the i7-8700K will overclock higher (can hit 5GHz with a very good cooler, though it depends on the silicon lottery and you may want to drop a bit lower depending on how close you are, the cooler/temperatures etc)
You of course also have to buy a new MOTHERBOARD and reinstall Windows so you would have to factor that into the equation.
*and if you got 4.6GHz on all cores for the i7-6800K the results would be a lot closer to say the i7-8700K at 4.8GHz. I'm not sure how close, though maybe 15% difference for things like video editing?
6800k definitely not. 8700k might be, but you will use a lot of cash on new board + cpu combo.
if you need more power try out more ram / better SSD.
I don't think 8700 will get you more than 20% of time cut off and for 1k$ with MBO, well its your choice.

Not sure what you mean. Both the i7-6800K and i7-8700K are about the best CPU you can get for the socket supported.
You may want to hold off for the 8-core version of the 8th gen as I believe that's coming. I think they said something about that coming in a few months but needing a Z390 motherboard?

The roadmap suggests a year away, though Intel accelerated Coffee Lake due to AMD's Ryzen so it's possible it would be in Q2 of 2018 but nobody knows that can comment.

My Z170 motherboard is 2 years old and it is still great. The Z370 motherboard will be good as long as it suits your needs. But don't think that if you buy new tech today that something better wont be released tomorrow.

I'm just starting to do a lot more video editing and i can't decide between 6800k, 1700x, or 8700k which isn't even in stock.

The truth is, they are all excellent CPUs. There may be a difference in synthetic benchmarks, but in the real world you will probably never tell a difference between the CPUs.
If editing videos is your primary concern then I would get the 1700x. I love the 8700k because it is better at gaming and can better handle workstation task like video editing than the 7700k. But the 1700x is an excellent CPU when you compare price vs performance. A B350 motherboard will be just fine to pair with a 1700x and those motherboards will be cheaper than the X99 or the z370.

bought a 1700x because the games i play are not that intense but i edit 4kMAX footage. thanks for your help and reassurance. PLUS it seems that the risen motherboards have an awesome upgrade path.
