A windows server is pretty much done the same way you do your pc just change it in under the ipv4 settings in the nic. The printer I have no idea that is a read the manual question. Some you can do via buttons on the front panel other you must use special software.

Unable to access printer on some workstations, Basic network, all devices (server, 2 work stations) running to one switch connected to single port on cable modem. Conflicting IPs, server IP setting? See detailed diagram attached.

You have two private subnets 192.168.0 and 192.168.1. That is why your .0.x devices can't get to your printer.
The orange on the switch probably means 100Mbit rather than gigabit.

So the obvious question is why do you have two subnets? That is the real question. There is something more sophisticated going on here than a standard small network.

So the server creating its own subnet? How do we resolve that
The office network was probably 192.168.1 and his home router is 192.168.0
Hence why the printer and server can see each other. How do we update the ip on the server and printer?
