Is SLI worth purchasing a new motherboard over?

I am trying to gauge an upgrade, i have been planning to upgrade my CPU due to many of my recent games i play running my CPU in the 90-95% constantly with occasional 100% hiccup locking up the computer, but i am trying to decide if it would be better for me to just offload the GPU's i currently have connected to my computer or try to save them and build a new rig with 2 in SLI.

I currently run an i5 3570K rig on AIO w/ 4 x GTX1080ti's in non sli.

The only reason i have 4 x GTX1080ti's mounted in my case is due to using them mostly for GPU Mining and my motherboard has 4 slots for GPU's, so i installed them and just run them mining 24/7 and have the primary GPU settings setup so when im using the PC it scales back the mining intensity enough so i can use it for normal daily task, then when i want to game i just turn off mining on GPU 0..... so i can use it for gaming.

So debating building a new Gaming rig with 1 GTX1080ti with modern CPU/mobo or go with a CPU/mobo combo that supports SLI and run 2. either way im probably going to take this PC and move it into my garage with my other mining rigs and run the either remaining 2 or 3 GPU's off it.
