In theory, yes. In practice, it will depend on the game, your settings and fps (which in turn depends on your graphics card), your CPU, etc. Overall, it's unlikely to make a large difference except maybe in certain edge cases.

You're always better off running dual channel if you can, but if your mobo only has two RAM slots and you want the option to upgrade to 16 GB without replacing your sticks, I'd say 1x8 GB is fine.
