I have put an i7-7700 in a ASUS ROG Maximus IX Hero motherboard for my workstation build. I develop console image processing applications which run on Win 8.1 machines hence I have the same OS.

The problem is that, the motherboard's graphics driver does not support Win 8.1 if 7th gen Kaby lake processors are used. Looks like till 6th gen processors Win 8.1 is supported and post 6th gen only Win 10 is supported.

Can someone help me with installing the driver so that I can take full advantage of the Intel HD 630.
Else I have to go through the painstaking effort of transitioning to the Win 10 OS.

Solution
There are no official chipset driver for Win 8.1, so your choices are..

1. See if you can find some unofficial drivers that will work.
2. Upgrade to Windows 10
3. Get a discrete GPU like a cheap GT 1030, but you will probably still have driver issues with other chipset features as it is not supported.

In the end, best option is to upgrade to Windows 10.

Because the applications I develop are deployed in Industries which almost run 24x7, so I preferred to use a low TDP processor to avoid overheating issues. The reason for a costly motherboard is to supply a constant voltage to the processor and to the costly USB peripherals connected to the PC. This is our first PC deployed in the industry so I was being over cautious.
