Upgrading my CPU and MB.
ryzen 5 1600 3.2GHz 6-Core or i7 7700k?
B350M MORTAR Micro ATX AM4 or Z370?

Well, i7 has slightly better single thread performance but R5 1600 is better in multi threaded applications. If you properly OC that Ryzen it gains in performance more than 7700K can do. I would suggest 1600x for better out of the box performance and better (easier) OC.
There's one more moment to consider. 7700K is on dead platform, later Intel processors demand other MBs and chipsets while AM4 platform will be able to use next generation of Ryzen processors for at least next 4 years, so it will be easier to upgrade in that time span.

Well, for just max FPS, the 7700k will be really good, and will stream well too.

CountMike has made some good points though. I went with the 1600x and B350 mobo. It's an awesome gaming system. I could have gone 7700k or waited for Coffee Lake. The 1600x is a really good chip and is easily OC (but so are most Ryzen chips). In theory the 1600 gets to about 3.9 OC'ed. The 1600x has XFR and if you have decent cooling can get to the 4/4.1 ghz mark. As CountMike also said, the 7700k is a dead platform as such. With Ryzen you will be able to drop in a new chip when the second gen comes out, and still have a rocking system.

It's a close call between the two!

Wow thanks so much for this detailed analysis. I guess its settled. The 1600 it is.

Which motherboard would you suggest to go along with the 1600?

Yeah it is a tough choice but I think the 1600 is a better choice especially if the 7700k only has slightly better FPS.
