GPU readings not detected

I recently had to reinstall a cooler after my AIO pump failed. There weren't any issues with my graphics card before, however now, since I've rebooted my PC, it has had a few problems:
1) NZXT CAM can see the card, but displays 0 for temperature, clock speed, fan speed and load
2) MSI Afterburner can see the card, but displays 0 for voltage, memory clock and GPU clock
3) Attempting to update the driver of the card results in the update failing, a static display, a windows blue screen and a restart.
4) A problem I encountered earlier, but seem to have now fixed, was only one of my 3 monitors was detected, it would randomly switch between the 3, and sometimes no display would come up at all.

I suspect some kind of GPU fault, but since games seem to be able to run (I tried CS:GO), and there don't seem to be any display errors, per se, I'm wondering if there's some kind of driver issue or other software problem instead. A failed card at this time is not ideal.

i7-7700k @ 4.5GHz
Geforce GTX 1080 strix A8G
Asus z270e strix motherboard
16GB DDR4 RAM (can't remember the clock speed)
NZXT Kraken x52
 
Solution
Since you do have on-board graphics, I would suggest completely uninstalling graphics drivers using something like DDU, which will switch you to on-board graphics. Then follow that with a fresh reinstall of whatever version of gpu drivers off of nvidia's support page you currently have (since you know it used to work just find without issues).
Also, reset bios either from within bios itself, or by shutting down and taking out cmos battery for 20 sec, and then putting it back in.
