Hi,

MY GOALS:
-Premiere Pro: Video editing at 1080p, with a possibility of doing 4K but not in a distant future
-Being able to use "Replace with Adobe After Effects Composition" in Premiere Pro (Using both softwares simultaneously). I think there's also "Adobe Dynamic Link" that could be useful.
-Doing special effects like smoke, gun shots or special lighting with After Effects
-Going to start doing 3D animations/CGI stuff with Cinema 4D & Unity
-Fast Rendering time in any software

I will also play games at 1080p, but I will make my choice for the video editing part.

I know a 1070 would out perform the 1060 in everything, but by how much? Is it really worth it? considering that I will probably be getting a 1080p 75Hz IPS ultra-wide monitor.

Depends on your rendering. If you are using the gpu to render, the 1070 will save you quite some time overall.

A 1060 can easily handle 4k video, but getting onto the 3d animation/CGI the 1060 might reach fps limits which could affect the work.

It's a case of better safe than sorry, as I see it.
