Hey I'm trying to build a gaming pc without overclocking it. Here's my list for the components I'm trying to get, any advice on what other component I should get?

My Ryzen 1600 is OCed to 3.8GHz with stock cooler easily. Some youtubers can get it higher with good temp. For your need, see below for my build:

Ryzen is designed to OC, but it is your choice :) If your main purpose is only gaming, 1600X is a better bang for the money as no games will use that 8 cores much :) What is your total budget? Living in US? Do you have a monitor? If so, what resolution and Hz? Can find you a better build with the budget.

I mostly need it for gaming and video editing, sometimes streaming, and I did some research the 8 cores will help a lot when I do streaming. No I'm living in Europe, budget around 1000 euro. I have a monitor full hd 60hz, another reason why I get a Ryzen because I don't need have that high hz. So here comes another question is it easy to OC? Do I need extra fan or cooler when I OC my processor?

I would highly recommend a higher Storage capacity. 200> will not be enough to store for the future. I recommend getting an SSD for windows and a few important programs, but then getting a 1TB HDD for less important files/programs
