Dual channel performence, ram bought separately

I'm building a computer and i've bought a single kingston 8gb 2400 ddr4, and i'm guessing if dual channel is really worth it, i plan to upgrade sooner to 16 gb (+1x8gb 2400 ddr4 kingston), but i heard it is not guaranteed they will operate in dual channel, even if i've bought a 2x4 set it will be the same if upgraded to 2x4 + 2x4, what is the difference in performence between 2x8 (or 4x4) rather than 1x8+1x8 (or 2x4 + 2x4), is it significant enough ?

If you add another 8GB stick and stick it in the proper slot on the motherboard then if the memory will work together if will run in dual channel if it don't work together then your PC will not boot.
Dual channel will show around a 5% performance increase.

So even if i buy the same memory stick (brand, capacity, frequency...) there is a chance it won't work ? If true, then i must sell the existing 1x8gb and buy a 2x8gb kit if i plan an upgrade, having a working 16 gb is obviously more important than having it working in dual channel, i don't want to gamble.

This is really weird, i never thought i would have a problem like this, on many pcs i owned, i used to snap memories, run different brands or like 3gb 2+1, all kind of different things and i didn't even question if they would work or not, i just snapped them and things worked properly, but i'm confused to hear that the exact same memory sticks bought separately may not function with todays technology.
