I do not wish to update my PC just yet, I've tried so many different ways to stop my PC from updating like disabling Windows Updates in services and other ways but it keeps coming back every time I uninstall it and it is super annoying.

Solution
If you want the latest updates for your current version but not the version upgrade, use Microsoft's own wushowhide.diagcab from KB3073930 to hide it.

Run it. Click the link marked Advanced. Uncheck the box marked "Apply repairs automatically." Click Next. Wushowhide will run for a long, time, and when it comes back up, click the link to Hide Updates. Select the offending "Feature update to Windows 10 version" you dislike, then Next.

Unhide it the same way, or there will be another version update in 6 months anyway.

That's one of the deals with Win 10.
Updates are mostly not avoidable. For a variety of very good, and not so good reasons.

Download Free Zone Alarm Firewall. When you see the Windows update assistant pop up you can right click the network icon in system tray and go to open network and sharing and go to your change adapter settings and disable your connection immediately. This will cause the assistant to say we've encountered an error and it will stop for the time being. Now go back and re-enable the network adapter. Now install the Zone Alarm firewall and disable windows firewall. Now click on the Zone Alarm icon in system tray and open it. Click view details under firewall. Click the programs link under application control. Scroll down and look for Windows Update Assistant or Update Assistant now go to windows control panel and uninstall windows update assistant before you kill it because otherwise zone alarm wont allow you to uninstall. Once the uninstall is complete then right click beside windows update assistant under Trust Level and select "Kill" then confirm with a "Yes" and you will never see Windows Update again. You can also do this with the Windows Update in the list or at the very least set outbound and inbound rules limiting Windows Update.

Does this help, I found on microsoft site here: https://answers.microsoft.com/en-us/windows/forum/windows_10-windows_install/is-it-possible-to-uninstall-the-windows-10-update/f6c52b1e-e4aa-48f4-9d56-7eae9640deda

The Update Assistant in Windows 10 cannot be uninstalled, but you can get rid of it

Click your Start Button, type Task Scheduler and hit enter
In the left Pane, navigate to: Windows - Update Orchestrater
Right Pane double click 'Update Assistant'
Click on Triggers Tab
On each of the triggers ( At login . . . etc.) double click and uncheck 'Enabled'

Under 'Update Assistant, there is another event 'Update Assistant CalendarRun'
Do the same for all triggers on that event

Restart your system, that's It!

Also, there is settings in Windows Update Advance option.. Pause Update, it pauses update to 35 days.
