1060 3gb will be good enough, but the 1060 6gb is ultimately a much better card if you're willing to pay for it. 3gb of VRAM is pretty low and honestly the bare minimum for today's gaming, so while I do think it is good enough it's still recommended to get a 1060 6gb.
Throw whatever laptops you're looking at in here, it would be better if we could see full specs on both of the laptops instead of just whatever GPU they're running.
