QUESTION:

I am going to be running 64gig of ram - period - no future addition

is it better to run 8 x 8 vs 4 x 16 and why

next what is dual channel, quad channel ?

I only ever used the whole 64GB once and that was 150 RAW 22 Megapixel images stitched together in Photoshop. Usually I never see above 32GB. On those rare occasion I do, its nice to have that extra ram for background apps. I can have Premiere, After Effects, Photoshop and web browser all open and still have memory left over. Its really nice.

Probably not that much better than 4x16 since you would still get dual/quad channel with 4x16.

Dual/quad channel is where you can boost the performance of your ram a bit with multiple sticks, dual being two and quad being four.

Hi! Actually, the difference between dual and quad channel is whether or not the CPU can talk to 2 or 4 sticks of RAM simultaneously. You can have four sticks and still be running on dual channel...the motherboard and RAM must support dual or quad channel for that feature to work. Whether it is better to run 8 sticks or 4 depends on this as far as improved performance...talking to 4 sticks is an enhancement over talking to two regardless of the number of sticks.

Honestly whatever is cheaper. But first you gotta know how many slots you have. That will limit your options. Just know the more DIMM slots you use, the lower your overclock will be because it stresses the memory controller. You may lose 100mhz but its really per chip and how much your willing to tweaking the voltages when overclocking.

Edit: I've had zero problems running 64GB 8Dimms for the last 4 years. Still can overclock the same as before with only 4 sticks, just involves more voltage tweaks.
 
What is your motherboard?
If your motherboard supports quad channel, I would buy 4 x 8gb.
If your motherboard, supports only dual channel, 2 x 16gb or 4 x 8gb are options that might be cheaper.
It is more costly for a ram vendor to match 8 sticks vs4, vs2.

what is better 8 matched or 2 sets of 4 matched - (not overly concerned with the money)

8 matched would be best for you know that they have been tested together to be compatible and reliable as a set, whereas with 2 sets of four there is a rare chance that the two sets may not be perfectly compatible with each other or function at optimal capability.

Yeah if you are doing 8K editing, 64GB is a must. I constantly use around 28GB in Premiere with RED 8K footage.

Best deal for 64GB would be these because you get 3200 speeds and only $15 above the lowest price which is $660 for 2133 ram. G.SKILL Ripjaws V Series 64GB (8 x 8GB) 288-Pin DDR4 SDRAM DDR4 3200 (PC4 25600). These are on the QVL list for that motherboard.

However memory speed isn't really going to matter if you are encoding at 8K. It takes a good hour to encode a 10 minute H.265/HECV 8K clip. But I don't see a point in saving $20 for slower speeds because that extra minute shaved off will add up over time and can make a difference from smaller clips.
