The 8600K will do just as well or slightly better than the 6700K for streaming and gaming at 1080p

The 1050Ti is just too much of a lightweight with your tasks in mind. The 1060 6GB will put you in a much better position for streaming. I would want a little extra eye-candy when streaming.
