I think a very appropriate build, you could do it as is.

One exception is that the case supports a cooler with max height of 157mm and the hyper212 is 159mm tall.
The cryorig H7 is only 145mm tall, and would do nicely.

Some thoughts:

1. The I5-7600k is a very good gamer, particularly when overclocked.
But, the newest gen I3-8350K has the same number of cores, is cheaper and overclocks higher.
You will need a Z370 motherboard which should be comparably priced.

2. A 500gb ssd is excellent and Samsung is arguably the best.
Unless you will be storing large sequential files such as videos, I would defer on the hard drive until you actually need the space.

3. A GTX1060 needs only 450w. 550w will handle a GTX1080.

I have no problem overprovisioning a PSU a bit. Say 20%.
It will run cooler, quieter, and more efficiently in the middle third of it's range.
A PSU will only use the wattage demanded of it, regardless of it's max capability.
Look at the Seasonic focus 550/650w units. 9.8/10 rated by jonnyguru.
