What kind of cooler can I put into one of these? It's a single cpu, a Xeon x5660. I already have the copper heatsink in there and just want something better. I was hoping on an WII but I dunno if any will fit. Quietness is a factor

Solution
The problem you're going to run in to is attachment to the motherboard. I haven't seen a t3500 in a while, but as I recall they do not have the standard heatsink mount holes (compared to a consumer heatsink). I suggest you add a quiet case fan instead. It will be less work, less money and achieve your goals of a quieter PC without much if any more noise.

Instead of holes in the board, these Dell use threaded studs to mount the cooler. So no aftermarket products will be an option.

I would suggest you mount a fan in pull configuration directly to the heat sink as shown below. Done this on several T3500 and works very well. Continues flow from front fan and out the case back nicely.
