I have an i7 4770, 8gb of ram, gtx 1050Ti and an SSD but I want to get Assassin's Creed Origins. However I don't due to budget restraints I was thinking of selling my i7 and picking up a temporary i3 4130 processor before waiting to upgrade to Coffee Lake in the near future. I was wondering if AC: Origins would still be playable at 1080p preferably with an i3, 8gb of ram, and a gtx 1050Ti? I heard that the game is very CPU intensive but I have seen some videos of it running on an i3 and also I don't mind turning down the settings to get more fps.

Just keep your i7. Coffee lake really isn't that big of an upgrade anyways and definatly not worth the huge investment for the increase it gives if you already have some budget issues.
