Solution
If it's for gaming either one will do. I have an 850 evo m.2 and a 960 evo and I use my computer for mostly gaming and internet browsing with a smattering of my personal film and video projects and except for when I'm copying a large media file I don't notice a difference in speed. you only notice if you benchmark. Of course if you do things that require a speedy drive then it's noticeable. the 600p is much slower than the 960 evo too so the difference is even less.

First off, put that RAID concept out of your mind.
You do not need it, and it may even be slower.

Which specific motherboard?
What other drives are in this system?
What will it be used for?
