GTX 1060 6Gb vs 780 GTX 3Gb SLI

I just bought a second hand computer and I'm planning to exchange the 2 GPUs EVGA 780 GTX SC 3GB it has in SLI for a single Zotac GeForce GTX 1060 AMP! Edition 6GB GDDR5. The goal is to achieve similar performance with less power consumption. CPU is a 2013 i7 4770k, RAM is a HyperX Savage DDR3 2400 16GB kit and motherboard an ASUS Maximus VI Extreme. Will it perform better or worse? Is it a good idea to buy the 1060 and remove the two 780?

So, maybe a GTX 1070 8Gb will perform better than the 780 SLI setup (although a bit more expensive)?
