Dilemma Needing Urgent Help - Monitors & PC Components

About a month ago I wrote in this forum (with a totally uneducated view) requesting help with selecting a PC for "4k gaming". I got lots of help which was a great process (e.g. basically identifying I need something like the GTX 1080ti, preferably 32GB RAM and so on). That started the ball rolling and since then I've done countless hours of research, speccing up and so on...

...However, now I'm stuck. I need advice on where to compromise, because I feel like a compromise is almost certainly going to happen somewhere based on my usage and needs. NB Budget isn't a concern; I'm looking at $2-3k for the PC and $1k-1.5k for the monitor, and those aren't set in stone, just 'ideals'.

MONITORS

I am considering one of 2-3 monitors - The LG 38" curved 21:9 (3840 x 1600) @ $1500, The Acer Predator 32" 4K (X321) with G-Sync and maybe one of the curved 1440's available 34" 21:9 (e.g. Alienware, LG, Predator).

If it was up to me, I'd almost certainly opt for the 38" LG (The looks, connectivity, curved screen and size are perfect to me for workflow and immersion). I will be using this monitor for photo and video editing as well it should be noted, but I am disappointed that most monitors, like the LG, just come with Freesync (I had my mind set on a GTX 1080ti) as I wanted to get the best gaming experience possible as a 50:50 split between work and play.


PC SPECS

Given the info above, my mind is torn between a perfect monitor and matching PC Specs to it. As mentioned, I've already specced up a PC with the 1080ti, 32GB RAM and a 4.2Ghz i7 with iBuyPower and was almost sure I'd go that route, but I can't find a monitor I love with G Sync... and why spend so much on a video card (and monitor) when it won't be represented on the screen (e.g. lower hz rate, prospect of tearing/stuttering).

So... should I maybe consider going for a Vega 64 (and/or specifically would dual Vega 64's offer a similar performance to the 1080ti? I am aware the Vega 64 lags somewhat when compared to the 1080ti in terms of textures/FPS but am not clear on whether simply doubling up the cards helps with this) just to get Freesync and then my choice for monitor is made (e.g. the LG). Or do I just suck it up and go for the monitor I want (LG 38"), the video card I want (1080ti) and live with any stuttering/tearing in games I'll be playing (I will almost exclusively be playing FPS's like Wolfenstein, COD, Destiny).
