is it ok to leave xmp on while I overclock my i5 7600k on a asus maximus 8 hero motherboard?

It's fine. I just posted that link as an example of high voltages. As long as you have a good cooler you'll hit an overclock wall long before you hit any temperature limits. Use the guide in my sig for reference of safe voltages and temps.
It's fine. XMP can increase temps because the memory controller is on the CPU. Having faster RAM outweighs any negatives with the temps though. As long as you have good cooling you're fine. Almost all overclocking testing is done with XMP enabled.
Standard DDR4 is 1.2v while faster DDR4 is 1.35v and the fastest kits are even 1.5v. More voltage = more heat.
