Need help build a new gaming PC.

I'm looking to build myself a new gaming PC but I need some help. It's going to be a strictly gaming PC(+discord) and the one I'm using right now will be relegated to general use. I'm looking to buy the parts and build it within 3 months.

I'm in Australia and limited to about $2000 USD(approx. $2600 AUD) but would possibly be willing to add an extra hundred or 2 depending on the requirements. It'd be nice to save some money if possible, but not at the risk of weakening the PC.

A few of the games I'll be playing would be destiny 2, overwatch, modded skyrim, witcher 3 and gta 5. I'd like something that can run all these games on ultra/max with no noticeable frame drops, possibly a gtx 1080/1080ti. I also need a new 1440p 144hz monitor and need recommendations, but that has a separate budget of $200-$300USD. I'll also need an SSD(256gb?) for the OS(Win 7) and at least a 3tb HDD.

I'd also like it to be as quiet as possible, my current PC is incredibly loud, especially when it starts heating up. I'm fine without liquid cooling because I know that's relatively expensive, considering my current budget, and I don't trust myself with the installation.

(EDIT) I didn't realize i put 1080p for the monitor, I meant to put 1440p. I've changed it now.

Hy, I made you this build: https://pcpartpicker.com/list/sFCbqk . I think for the budget it is kind of the best you can get. If I didn't include the OS it's around 1950 USD so I was thinking of using that extra 50 dollar on a better monitor because a 1080ti is a bit overkill for 1080p, so I went for a 144hz 1440p. I didn't knew what colours you like so I went for a classic Black and White scheme. Hope that I could help.
 
For 1080P gaming a 1080/ti is overkill. The 1070ti would be a better choice.
