Since we're so close to Black Friday/Cyber Monday, wanted to get some other people's perspectives on what I might need to upgrade or what's holding my current rig back as far as gaming goes

Any thoughts?

you would benefit much more with coffelake / Ryzen line up, the extra cores will help :)
i7 8700k + Z370
or
R7 1700 + B350 / X370
the intel definitely won in terms of gaming performance, but also cost a lot more
while the ryzen lose in terms of gaming, it offer more cores/threads, for less buck
pick your poison :)

PSU is low quality, i suggest u get something like:
Corsair: RMx / TXM
EVGA: G2 / G3 / GS
Seasonic: G / Focus Plus / X

if u want to SLI, opt for 850w++, i wouldn't suggest anything lesser than that, but imho, a single GPU solution is better and more reliable, something like 1080 Ti perhaps

getting the windows 10 is much better, ensuring support on future apps and updates

PSU and Windows 10 makes sense but why the Z370 Mobo?

Edit: Nevermind, dumb question. My current mobo isn't compatible with the 8700K.

@OP
ah sorry, my recommendation earlier are under the impression of OP trying to build a new PC, i didn't read the whole sentence carefully, sorry :)

since u already had the rig, only the windows and the PSU requires some change, everything else is still nice
your upgrade path is pretty non-existent imo, since the i7 7700k is not a worthy upgrade at all, it doesn't offer too much improvement

for the things that holding u back:
CPU: u will benefit from OCing it
RAM: same as above
why OC? since u had SLI configuration, those 2 will be leashed by your CPU and RAM performance if they can't keep up
GPU: sometimes, games that doesn't like SLI configuration might experience a performance decrease instead, this might be the case in your problem
