PLEX Server Build

Good Morning.

My home setup currently runs a plex server on my wife's PC with an i7 4770k, 16gb ram, 780ti, basically a gaming rig with about 25tb of HDD space for the library.
I know thats overkill, I just wanted some opinions on a good build for a new server box, to give my wife her computer back..

Maybe, an Intel i5, with 8gb ram, stick with onboard graphics, simple mobo, etc.. thoughts?

25TB of data is a lot. Is this irreplaceable data or "stuff I got off torrents"? If it was me, I would probably create a FreeNAS box and a ZFS filesystem. You can run PLEX on FreeNAS. That does mean that your disks would be reformatted and your current data would have to move/be restored.

The data is comprised of me and my wifes entire collection of dvd movies, and blu ray movies. as well as all out tv series on dvd and blu ray.

Just looking to build a new pc and move the hard drives over, not have to move all those DVDs over again. That took months.
