Every chip is different. You shouldn't start with any OC'd settings from your old chip. I *think* the bios will put everything back to standard when it sees the new CPU, but I'd set everything back to auto before you change the CPU. You've already updated the bios, I would reset to standard then shut it down. Swap the CPU over and attach heatsink. Then boot up and use the CPU for a day or two at stock so you know everything is good. Then OC the CPU if you want/need.
