Is this PC good enough for gaming?

A good starter PC, yes. But if you are planning to OC the CPU, you can't do it with a 320 board. Go 350.
The 1300 can handle just about any card available today w/o bottleneck. Up to a GTX 1070 anyway if the CPU is OC'ed.

So something like this then
ASRock - AB350M-HDV Micro ATX AM4 Motherboard?
Also, I was planning on a 1200, should I go for a 1300 instead?

Yes, that board will allow OC'ing. Unfortunately, it is not a good choice for OC'ing because it has low power phasing and no heat sinks on the VRMs. Move up to the next tier in the Asrock line and it should have what you need for OC'ing safely.
