Hi guys creating a new build with a 1080ti strix oc and it has two 8-pin connectors on it.

Would it be ok to use an 8-pin and connecting the two 6- pins to a cable that plugs an 8-pin into the PSU

So it goes 8pin with two 6- pin connectors into another two 6-pin and plugged with an 8-pin into the PSU. Is that alright?

My PSU is Corsair rm1000x

Solution
No problem.
6+2 in 8 on GPU and the other end to the power supply.
Another 6+2 in second 8 on gpu and the other end to another 8 pin on the power supply.

Six pin connector = 75W (adapted or not)
Eight pin connector = 150W

Will it hurt the card? No.
Will the card OC or be stable? Possibly, but iffy

New build with a 1080 Ti? Spend the extra $100 and get a proper PSU. I like Seasonic. 600W is adequate.
