Alright so let's start this off by saying that I currently have a GTX 1080, and would like to buy a MSI RX 580 purely for mining Etherium, and maybe streaming (Will be in the same build).

Since I have a GTX 1080, I would like to continue using Nvidia and Geforce Experience rather than AMD's software. My first question is, does the MSI RX 580 use AMD's software since it was originally their card, or does it use Nvidia? If it does use AMD's software, is this a bad option for me to pick for my intentions?

My next question is, if they both use Nvidia, could I SLI these cards without directx 12? For an example, could I go onto GTA 5 and SLI it with my GTX 1080 without having issues?

Another question is, would a 750 Watt power supply be enough to mine 24/7 on the RX 580, while gaming on the 1080?

And my last question is, would I be bottlenecking anyting with this upgrade?

PC Specs:

CPU: AMD Ryzen 7 1700X
GPU: GTX 1080
RAM: 16 GB DDR4 Corsair LPX
PSU: 750 Watt
Motherboard: MSI x370 Gaming Pro Carbon
Hard Drive: 560GB SSD, 1TB HDD

The exact GPU I want:

I'm not too sure about that. I would not run two different BRANDS in conjunction. That's a great question though.

The AMD card WILL NOT run off Nvidia tech and drivers. If it did work I would assume it would be a massive pain in the butt.

I do know you can run any other Nvidia card in another slot as long as you don't try to run them in SLI or something, it simply will not work.

Now as for mining. You're not going to make a huge profit, especially not using a single 1060/580. At most you will make about $20 a month, running it 24/7. As a general rule, whatever you invest into a mining rig will usually take about a year to recover the costs and start turning a profit.

At the same time, you will running your rig for gaming, it is not...

At the same time, you will running your rig for gaming, it is not advisable to do that. You may be fine with the GPU usage, but mining will still draw on some of the CPU resources making it a terrible idea for gaming. It would be better to build an entire rig separately, but again that will increase the time it takes to recover your costs. All of that is assuming the market stays the way it is, which it most certainly will not. Unless you are running an ASIC with about 12 high-end GPUs, you won't be making much in today's mining market. There is simply too much competition to make mining on a single card worthwhile.

For example to make any real money you would need to invest something like 12 grand into an ASIC miner, run it 24/7 and then you could make about $1,000 a month, roughly.

At this point its about 100 times more profitable to buy and sell bitcoin while the market fluctuates. In just the last six months bitcoin has gone from about $1,200 USD per coin to just under $11,000 USD per coin. If I had the money to invest that's what I would do. That's a cash cow right there. 10-fold return on investment in six months....
