Hii I'm having troule deciding on which cpu/gpu combo should I get.

Here are the rest of the specs:

psu: 550 Watt Seasonic FOCUS Plus Modular 80+ Gold-75€

HDD: WD 1 tb blue-41€

Mobo: msi 350 pc mate-78€
RAM: G-skill rip jaws 3200- 107€
case:Corsair 270r-58€

1050 ti is 145€ while 1060 is 200€
ryzen 3 1200 is 100€ while ryzen 5 1500x is 160€

I'll be playing games on 1080p, and I'm satisfied with high settings.

For 1080p gaming you want a minimum of a 1060 if 'future proofing' is part of your goal. That's because i would call the 1050 Ti adequate for 1080p today. "Adequate" means just enough, there's no extra performance to spare. in fact, some of today's games might not run at 60fps high settings 1080p on a 1050Ti.

So then the real question is can you game for now and the future with a quad core 1200? I say yes. It's true games will be coming out that will take advantage of more cores or more threads, but they won't require more than quad core for a very long time. That's not counting the extra performance you might someday get by overclocking the 1200, since I know not everyone wants to bother with overclocking.

In short, a 1060 will help...

I'm deciding now in between the 1600 + 1050 ti, 1200 + 1060 3gb or 1600 + 1060 3gb( I know this is the best but i can get almost the same performance in games with 1200 just like 1600 for 100€ less).

In short, a 1060 will help you now and in the future more than a 1200 will hold you back. A 1500 or 1600 is not going to do much for you in games today or tommorrow especially when limited by a 1050 Ti.

I owned a quad core processor since my time of building PC's until this year. More cores/threads are just very practical to have. It keeps your CPU usage lower in games that don't use more than 4 cores or 4 threads, causing background apps to not cause hick-ups while you're playing a game.

In games that do use more cores/threads, you'll have more consistent performance and higher minimum framerates in most cases.

Besides that, if you ever happen to convert/decode gameplay clips or general videos, or render something it'll do it a lot quicker.

More cores/threads has benefits for almost every consumer, since It's affordable nowadays it becomes more and more impossible for me to still suggest quad core processors when better ones have become so affordable.
