i7 7700k or i7 8700k?

So I’m building a new system that will be mainly used for gaming, with some java programming and video editing also. My budget is about $1650 and I’m trying really hard to fit a GTX 1080 Ti into the budget. It is a microATX system, and the Z270 and Z370 motherboards I am looking at are about the same price. However, the i7 8700k is going for about $420 on eBay while the 7700k is only $275(I shop on EBay for lower prices and no tax). I really want the best performance possible but I don’t want to completely demolish my wallet. Is it worth it to cheap out on other components(hard drives, ram) in order to purchase the 8700k?

The rest of the specs are:
16 GB DDR4 RAM 2133Mhz-2400Mhz(whichever is cheaper)(Used)

Z270/Z370 MicroATX motherboard

Cooler Master Liquid Cooler

1TB 7200rpm Western Digital Hard Drive(Used)

250 GB Sata III SSD(Used)

750W EVGA 80+ Power Supply

GTX 1080 Ti(Used) (Hopefully)

ThermalTake Core V2 case(I already have this, not included in budget)

I just purchased the 8700k for my 1080ti and smashes through everything @ 1440p. I thought about this aswell before I purchased my 8700k I was also looking at ryzen but if you're just gaming I think it makes sense to get the 8700k. At this moment in time as games are starting to utilise more cores/threads. Useless you're planning on upgrading again within like 1/2 years I think getting the best cpu you can afford for your application makes the most senes.
