New build/upgrade advice

I'm running a ~7 year old PC currently that was high end at the time but now showing its age, especially when it comes to games and video card related tasks. Here's my current build:

i7 2600k, Gigabyte z68-ud3h-b3, corsair tx-750 bronze, kingston hyper x (16 GB), Gigabyte gtx 570, Cooler Master Haf 932, new (this year) SSDs 480 GB and 240 GB, 1 TB HDD and 10 TB of networked storage in my server.

I'm good on storage but my GPU is basically done and I would like to get some advice. Which parts should I keep, which would be good to replace. I don't really have a budget, as long as the parts are a decent value and want something that can play any game on ultra (I was thinking a 1080 ti). I could be convinced to go with a lesser GPU so maybe anywhere from $300 to $1500 for this whole upgrade, depending on the value.

Everything is on stock speeds; I originally planned on OC'ing the CPU but never got around to it and at this point the GPU is by far the bottleneck.

What monitor?

Depending on the above could overclocking the 2600K and just getting a better gpu be fine for now.There are some comparison vids about the 2600K vs the 8700K and the 2600K still does well.
