Solution
Different themes change different things like desktop and other parts but first, original theme should still be there. Haven't changed in ages.

What I'm saying is that in updating Windows 10, my "theme" seemed to change and I'd like to revert the changes made. Would a theme do that? For instance, there is a white box around some icons in the taskbar: https://gyazo.com/6c76fbe2ed5f71f5127d5a36716f02e9
It should look like this: https://gyazo.com/ce67815dc85884c64a51219db5cbb149

I haven't changed my theme though. All of the changes viewable in the screenshots only occurred after the Windows update.
Edit: Just checked my themes and it appears that I have a "custom" one. No idea how that's happened. I've never downloaded a theme. I've re-selected the default Windows 10 one.

Custom theme is when you choose your own wallpaper or change other color it count as "custom" since you customise your own. Choosing other theme let the theme set all the stuff for you.
