PC randomly restarts while gaming

Hi,
I bulit my pc 2 years ago and have had zero issues with it until a couple of months ago when it started randomly turning off while gaming and restsrting. Once it starts to boot up again instead of tbe usual 40 seconds it can take upto 5 minutes to be back on the desktop.
I did install an ASUS Strix 1080 in July which ran without incident until October when i replaced my monitor (coincidence i know)
My specs are as follows
Gigabyte Z87Z-UD3H
4790k
Arctic Freezer Rev 2 cooler
16gb Corsair Vengeance 1333 mhz
Corsair cx750m
ASUS Strix 1080 (previously a reference evga 980)
Windows 10
It only happens on 3 games Assetto Corsa and Euro Truck Sim 2 using the Oculus DK2 and Battlefield 1 on the monitor.
I've replaced the gpu and it still happens. I thought it may be a temp issue so have tested the cpu which hovers around 70 degrees while stress testing in prime95. And doesn't get to 70 degrees while playing any of these games so it doesn't seem like an overheating issue either.
Has anyone got any suggestions please?

Update, i have lowered the graphics settings slightly in ETS2 and so far after around 30 mins of gameplay no shutdowns. I lowered thw scaling from 200% to 125% and turned off HDR all other settings remained maxed. I thought my GPU could handle anything.... maybe not.
If a gpu can't handle what's on screen should it just shutdown without any slowdown, stutteting or anything?
