GPU "Overheats" and then my PC freezes. Why?!

Here's my build. https://pcpartpicker.com/list/CGbm4C

I recently got the new case as well as the new cooler.
Here is my Corsair Link https://gyazo.com/6739bc57dc75b70384aa089fa32752f0
I do get the CPU FAN ERROR, but I'm sure it is because there is nothing connected to the CPU FAN HEADER.

I know temperature #7 is ridiculously high, but it literally fluctuates at 0C, 70C, and then at 127C. Sometimes I think it is a problem and other times I don't because when the PC is at IDLE nothing goes wrong at all and it is on all day basically.

The real problem is that when I play something like PUBG and my heater is on the PC will at one point just freeze once it reaches 81C, which is ridiculous because I thought that a 1080 could go up to 100C without a problem. BTW nothing is overclocked at all besides the fact that the GPU is "Superclocked". The three fans in front of the case are intakes, and the three on top as well as the one in the back are exhaust. I honestly don't know if I should switch them around, but I can also say that the radiator is behind the fans instead of vice versa.

Now I know I should just have the heater off to prevent this, but the thing is that this problem never happened until I got my new CPU cooler and I thought that switching the case from a 300R to a H440 would help because the new cooler didn't fit the 300R. CPU temperatures go at most at 50C when I play PUBG and the GPU with the heater off goes at 75C at most.

I know this is a lot to read, but I am kind of at loss here because it makes no sense for my GPU to go full retard with the amount of fans I have. I also have the drivers up to date so not the problem.

Solution
Try downloading NZXT Cam, from that software you can adjust the fan speed on your gpu at different temperatures. Otherwise try turning the fan speed on all your fans up a bit
