I would game at 768p and lock all games at 30 fps.
What would be in the list of latest AAA games that I can play mid to high settings?

You need a BIOS update for that CPU to work with that motherboard, but if you can somehow update it before building it (a friend's PC with a compatible CPU), then it would run most if not all triple A title games at 768p/30 FPS. The 750 Ti is about as good as an Xbox One, and that CPU is definitely good enough, and some people have even paired it with an RX 470/GTX 1050 Ti and get pretty good numbers in 1080p.
