Well, they make portable monitors, but to get one good enough for gaming you really have to break the bank:

(The cheaper one will have extremely serious image ghosting issues for any type of movement gameplay)
And any non portable monitors aren't going to have "easy to remove stands.
Also I don't know the size or dimensions of your backpack.

This is also why Laptops exist.
