I figured as much, because PCIe lanes are MUCH faster than the SATA bus, and the Z370/Coffee Lake has dedicated PCIe lanes for multiple M2 drives.
Depends. There is a lot of m.2 500/500 speeds. m.2 is still slightly faster, but diff will exist mostly in game loadings, no other major diff.
m.2 goes up to 3500/3200 but price hurts
