Computer randomly restarts during gaming.

Hello,

I recently upgraded my motherboard, CPU, and RAM. Before the upgrade, I have had no issues with PC restarting or acting up in any way. After I reinstalled a fresh copy of Windows 10, my computer will randomly shut off during games (so far I've noticed in ESO if I'm running a dungeon or American Truck Simulator at random times.) The motherboard will stay lit, and after a few seconds, the PC will restart. Sometimes I can go all day without a crash, others it can happen every 10-15 minutes.

Specs:
i5-8600K
GeForce GTX 1080
Intel Z370 motherboard
16 gbs RAM
Corsair HX1050

I've never had this issues before. What I have tried to do so far to fix the issue:
Reinstall Windows again, shut down/restart still occurs
Flashed BIOs to newest version, still occurs

I thought maybe it would be a temperature issue since that's the only experience I have had with crashes like these, but CPU idle temp is 45c and gaming temp runs about 60-63 degress Celsius.

Let me know what I can provide in order to help try to diagnose this. I don't know where to even start at this point.

I am not able to without purchasing a new one. I may be able to get a hold of one, but it is probably significantly less powerful than my current one. Is there anything else I could do? I moved wires around in my case, my CPU temps are now lower, but the crash still occurs.
