750w is more than enough.
If the CX750m is working properly, I would use it.

As to the cooler, since you have one, you might as well use it also.
I am not a fan of liquid cooling unless you have a space restricted case.
if you dont have a lot of money the older 620w seasonic are not bad units. with a new build try and buy one of the newer digital power supply's. the newer units let you read how well the units running and can set fan profie to keep the unit silent intill under gaming load.

My current PSU is the Corsair CX750M (Model number 75-002019). Sorry I don't have a link. I also would like to mention my cooler as the Corsair H115i. It works but I'm not sure if the PSU OR the fan and water cooler (H115i) would work that well.
