Can I replace my PSU so i can run gtx 1060 6gb

I have an HP Envy Desktop 750-197c. If i recall correct i think it has a 300watt PSU which isnt enough to run a gtx 1060 6gb. Would i be able to buy a different PSU that will still fit in the case? Its a completely stock case with a PSU on the top. Will a higher PSU even fit correctly? and what wattage do you recommend.

Yes you can. You are correct to identify you will need a more powerful power supply.

Your case uses a standard ATX power supply so another PSU will fit. I recommend something 600 watts min, and definitely modular. You will have some airflow issues in that case natually as it isn't a gaming case.

I also found forum post by someone who did a similar project; similar PC and a 1070GTX. Here is the end result. You MAY have clearance issues with the 197c but drive cages can be removed.
